Recipe: Herby Breadsticks with Garden Pesto

A nutritious and Mediterranean inspired snack for the whole family to enjoy, or surprise your guests with a starter at the next meal.

Ingredients

Main

  • 250g white flour
  • 160ml water
  • 5g yeast
  • 5g sea salt
  • 13ml olive oil
  • small handful of chopped thyme
  • small handful of chopped rosemary
  • small handful of chopped sage

Pesto

  • bunch of basil
  • bunch of parsley
  • 50g parmesan
  • 100ml olive oil
  • 50g toasted walnuts
  • 2 garlic cloves
  • salt and pepper

Method

  • Mix all of the ingredients together into a white dough
  • Knead for 10 minutes until stretchy
  • Leave to prove for 15 minutes
  • Lightly flour your work surface and roll the dough out thinly (roughly 1cm thick)
  • Cut the rolled out dough into thin strips and place them on a large tray, stretching each one to fit
  • Be sure to leave a little space between each one so they can jump in size in the oven without joining together
  • Once the tray is full, bake in the oven at 230°C for 8 minutes, or until they start to golden up – then leave to cool
  • To make the pesto, blend the ingredients together in a mini chopper or pestle and mortar until you have a delicious paste
