Recipe: Warm Dark Chocolate Fondant

A Warm Dark Chocolate Fondant with a melt in the middle, saucy centre… need I say more? This one is always a hit with my wife and kids AND anybody else who tries it! It is a great dinner party dessert as you can make it up the night before, saving you the hassle of running around on the day – enjoy cooked straight from the fridge when required.

 

Serves: 4 adults, as a dessert

Preparation time: 30 minutes

Cooking time: 10 minutes

Ingredients

  • 2 medium eggs
  • 2 egg yolks
  • 100g butter
  • 100g dark chocolate
  • 45g sugar
  • 60g flour

 

Method

  • Cream the eggs and sugar together
  • Melt butter and chocolate
  • Add the melted chocolate to egg mix
  • Add flour and whisk until completely mixed
  • Pour into greased moulds and cook at 180°C for 8-10 minutes
  • Leave the fondant to rest for 1 minute after removing from oven

Presentation

  • Run a small knife around the edge of the ramekin and turn fondant out onto plate
  • Serve with a sharper taste, such as orange & cardamom ice cream or raspberry sorbet
